Ingredients

  • 1 ring of Cumberland sausage
  • 1 large onion
  • 1 clove of garlic (if desired)
  • 1/2 red pepper
  • 1/2 yellow pepper
  • 1/2 green pepper
  • 1/4 mushrooms
  • 1 400g tin of tomatoes
  • 1 vegetable stock cube
  • Salt and Pepper to taste
  • Oil for frying
  • 250g-350g rice - dependent on servings
 

Mrs. Stevenson's Cumberland Sausage & Rice

Cook sausage in traditional manner and allow to cool.

Fry chopped onion and garlic (if used) until translucent.

Add chopped peppers and cook for further 2-3 minutes.

Add mushrooms and cook for 1 minute.

Cut sausages into bite sized pieces and add to vegetables, stirring well, until heated through.

Add tinned tomatoes.

Dilute stock cube and add, to make a fluid, moist meal and season to taste.

Cook rice according to instructions.

Serve hot,on a bed of rice, garnished with basil leaves.
