Ingredients

1 onion, chopped fine

1 1/4 cups brown lentils

2 rashers bacon

2 gloves garlic

2 tbsp olive oil

2 Chorizo sausages cut in 1/4in slices

125g Black pudding in chunks

2 pints of good chicken stock

pinch of chilli powder

salt & pepper to taste

Serves 6

 

Catalan Lentil Soup

Heat oil in large saucepan, add onion, bacon and garlic cook until soft.

Add Chorizo and cook for a further 4 minutes.

Mix in the lentils and pour over the stock.  Cook until tender then add black pudding and pinch of chilli powder.

Continue to cook for a few minutes to heat the black pudding thouroghly.

Add salt and pepper to taste.

Serve with chunks of fresh bread
